3/4 c. whole almonds, toasted
1 c. unbleached all-purpose flour
6 Tbsp. chilled butter
1/4 tsp. almond extract
1/4 c. sugar
1/4 tsp. salt
1 egg yolk

Preparation

Preheat oven to 325\u00b0. Finely grind almonds and 1/4 cup sugar in processor.
Blend in flour and salt.
Add butter and cut in using on/off turns until mixture resembles coarse meal.
Add yolk and extract, blend until dough forms clumps.
Shape dough into 1-inch balls.
Place on prepared cookie sheet, spacing evenly. Sprinkle with sugar.
Bake until golden brown, about 25 minutes.
