Chicken Cacciatore - cooking recipe

Ingredients
    3 lb. chicken
    1 1/2 tsp. salt and pepper
    1 clove garlic, minced
    1/2 c. sliced mushrooms
    1 (6 oz.) tomato paste
    1 tsp. basil
    1/4 c. dry white wine
    1/2 c. flour
    1/4 c. vegetable oil
    1 medium onion, chopped
    1/4 c. parsley
    1 1/2 c. water
    1 1/2 tsp. oregano
Preparation
    Flour the chicken. Brown the chicken in a large pot in the oil.
    Remove and keep warm.
    In the same pan, lightly brown the onion, garlic, mushrooms and parsley. Return the chicken to the pot and add the tomato paste, water and remaining spices. Cover and simmer for 30 minutes. Add the wine and simmer, uncovered, for 15 to 20 minutes.
