Zucchini Casserole - cooking recipe

Ingredients
    1 1/2 lb. zucchini
    1 can cream of mushroom soup or chicken or celery
    1/2 c. shredded Cheddar cheese
    1/2 c. sour cream
    1 large carrot, grated
    1 medium onion, chopped fine
    1 stick margarine, melted
    8 oz. pkg. Pepperidge Farm herb seasoned stuffing mix
    salt and pepper to taste
Preparation
    Cut zucchini into 1/2-inch slices and cook in water for 8 minutes.
    Drain and add mixture of soup, cheese, sour cream, carrot, onion, salt and pepper.
    In separate bowl, mix stuffing mix and 1 stick margarine, melted.
