Tofu Mexican Casserole - cooking recipe

Ingredients
    3/4 c. onion, chopped
    2 Tbsp. salad oil
    1 (28 oz.) can tomatoes
    1 (1 1/4 oz.) pkg. taco seasoning mix
    1/2 tsp. salt
    1 (4 oz.) can chopped green chilies
    1 (7 1/2 oz.) pkg. tortilla chips
    1 lb. Jack cheese, grated
    1 (17 oz.) pkg. tofu, crumbled
    1/2 c. cheese, grated
Preparation
    Saute onion in oil until tender. Add tomatoes, taco seasoning mix, salt and green chilies.
    Simmer, uncovered, 10 to 15 minutes. In a
    lightly greased 2-quart casserole, arrange 1/2 of each of the following in layers:
    tortilla chips, sauce, cheese and tofu. Repeat layers.
    Bake in a 350\u00b0 oven for 25 minutes. Sprinkle with cheese and bake an additional 10 minutes.
    Let stand for 10 minutes before cutting into squares.
    Serves 6 to 8.
