Scalloped Rhubarb - cooking recipe
Ingredients

2 to 3 c. bread, cut in 1/2-inch cubes (whole wheat may be used)
3 to 4 Tbsp. melted margarine
2 to 3 c. diced fresh or frozen rhubarb (thaw if using frozen)
1/2 c. raisins
1/3 c. firmly packed brown sugar
1/3 to 2/3 c. water
Preparation

In a medium bowl, toss bread cubes with margarine.
Add rhubarb, sugar and raisins; mix gently.
Turn mixture into a 1 1/2 quart casserole sprayed with nonstick coating.
Pour water over mixture.
(Amount of water depends on dryness of bread and moistness of rhubarb.)
Bake at 325\u00b0, covered, about 45 minutes or until slightly bubbly.
Serve with roast beef, pork, lamb, chicken or turkey.
