Port-Glazed Walnuts With Stilton - cooking recipe

Ingredients
    2 1/2 c. (9 oz.) walnut halves
    3/4 c. sugar
    3/4 c. Ruby Port
    freshly ground black pepper
    1 bay leaf
    1 lb. wedge Stilton
Preparation
    Preheat oven to 350\u00b0.
    Spread nuts on parchment-lined baking sheet. Bake 8 minutes or until lightly browned. In saucepan, combine Port, sugar, pepper and bay leaf. Bring to a boil. Cook over moderate heat, stirring occasionally, until slightly thickened, 3 to 4 minutes. Discard bay leaf. Add walnuts to saucepan, stirring evenly to coat. Using a slotted spoon, drain nuts very well. Bake in a single layer on parchment-lined baking sheet. Bake 12 minutes or until nuts are mostly dry. Serve with Stilton and wafer crackers.
