Rhubarb Bread - cooking recipe
Ingredients

1/2 stick butter
1 c. sugar
1 Tbsp. grated orange peel
1 tsp. vanilla
2 eggs
1 1/2 c. nuts, chopped
2 1/2 c. flour, divided
1 tsp. baking soda
1/4 tsp. salt
3/4 c. buttermilk
1 1/2 c. coarsely chopped fresh rhubarb
Preparation

Preheat oven to 350\u00b0.
Butter bottoms only of a 9 x 5-inch loaf pan and set aside.
Beat butter, sugar, orange peel and vanilla in a large mixer bowl until light and fluffy.
Add eggs, one at a time, beating well after each addition.
Add 2 1/4 cups flour and remaining dry ingredients.
Alternate with buttermilk to butter mixture, beating at low speed until just blended.
Toss rhubarb with remaining 1/4 cup flour.
Fold into batter with nuts.
Turn into prepared pan, spreading evenly.
Bake until wooden pick comes out clean, about 1 hour and 20 minutes.
Cool in pan 10 minutes. Remove from pan and cool on wire rack.
