Beet Relish - cooking recipe
Ingredients

2 qt. blanched, peeled beets
3 1/2 c. shredded cabbage
1 c. granulated sugar
1 oz. mixed whole spices (cinnamon, cloves and allspice)
1 1/2 c. cider vinegar
1/3 c. red peppers
3 Tbsp. salt or to taste
Preparation

Put cabbage, beets and red peppers through food chopper. Place in saucepan with vinegar, sugar and salt.
Tie spices loosely in a bag.
Let simmer until beets are tender.
Remove spices and fill hot jars; seal.
