Chicken Sauce Piquant - cooking recipe

Ingredients
    1 c. cooking oil
    1/2 c. flour
    3 large onions, chopped
    1 c. celery, chopped
    1/2 c. bell pepper, chopped
    1 large can tomatoes
    1 can mushrooms (optional)
    1 can tomato paste
    1 Tbsp. parsley
    1 Tbsp. onion tops
    salt and pepper to taste
Preparation
    Cut up one large chicken (hen), 3 squirrels or 2 to 3 rabbits. Brown meat in cooking oil; remove.
    Add flour and brown.
    Add onions, celery, and bell peppers.
    Cool until soft.
    Add tomatoes and tomato paste.
    Cook 5 minutes.
    Add meat and 1 quart of water. Cook until tender.
    Season to taste.
    Add onion tops and chopped parsley.
