Herb Seasoned Beef Tenderloin - cooking recipe

Ingredients
    1 (4 lb.) beef tenderloin, trimmed
    2 Tbsp. Dijon mustard
    1 Tbsp. olive oil
    1 Tbsp. freshly ground black pepper
    1 Tbsp. dried crushed oregano
    1 Tbsp. dried thyme, crushed
    1 Tbsp. finely snipped chives
    2 cloves garlic, minced
    1 Tbsp. salt
Preparation
    Combine mustard and olive oil; brush on all sides of tenderloin.
    Combine pepper, oregano, thyme, chives, garlic and salt.
    Pat seasoning mixture on all sides of roast.
    Place tenderloin on a rack in a large shallow pan.
    Let stand at room temperature for 30 minutes.
    Insert meat thermometer.
    Roast at 425\u00b0 for about 45 minutes or until meat thermometer registers 140\u00b0 for rare.
    Remove from oven and let stand 45 minutes, then wrap and chill.
    Before serving meat allow tenderloin to stand at room temperature for 2 hours.
    Slice and serve at room temperature. Serves 12.
