Lemon Mardi Gras Squares - cooking recipe
Ingredients

1 1/2 c. all-purpose flour
1/2 tsp. salt
1/4 tsp. baking powder
3 eggs
1 c. confectioners sugar
1/2 c. butter or margarine
1 c. sugar
1/3 c. lemon juice
2 Tbsp. grated lemon rind
1/2 c. chopped pecans
Preparation

Sift together, flour, salt and baking powder.
Beat 3 egg whites until soft mounds form.
Add confectioners sugar gradually, beating until stiff straight peaks form.
Cream butter; gradually add sugar.
Add 3 egg yolks, one at a time, beating well.
Add the dry ingredients alternately with lemon juice to creamed mixture. Stir in grated lemon rind and chopped pecans.
