Okra Pilau - cooking recipe

Ingredients
    4 slices bacon
    1 1/2 c. boiling water
    2 c. sliced okra
    2 c. chopped tomatoes
    1 c. uncooked rice
    salt and pepper
    1/4 tsp. dried basil
Preparation
    Saute bacon until crisp and set aside.
    Add the boiling water to the bacon drippings.
    Add okra and tomatoes; let come to a brisk boil.
    Add rice, salt, pepper and basil.
    Cover and cook over low heat about 30 minutes or until rice is tender and fluffy. Add more water during cooking, if needed.
    When ready to serve, garnish with the bacon crumbled on top.
    Yields 6 servings.
