Chicken In Wine - cooking recipe

Ingredients
    4 chicken breasts (with bone)
    1 Tbsp. oil (or Pam)
    1 tsp. garlic powder
    1 tsp. onion powder
    1/4 c. dry parsley or 1/2 c. fresh
    2 tsp. dry tarragon or 4 fresh (less if you're not too fond of it)
    1 onion, sliced
    1 large tomato, sliced
    1 bunch scallions, cut into 3-inch lengths
    4 oz. can mushrooms, sliced or pieces or a few fresh
    salt and pepper
    1 c. dry white wine
    1/4 c. brandy (optional)
Preparation
    Brown chicken breasts on both sides.
    Leave meat side down and add salt, pepper, onion powder and garlic powder.
    Sprinkle parsley and tarragon on top.
    Add slice of onion, then tomato on top of each breast.
    Top with scallions and mushrooms.
    Pour 1 cup wine and optional brandy over chicken.
    (Alcohol will all cook away.)
    Cover and simmer 1/2 hour.
    Uncover and simmer 15 minutes. (If too much liquid, add a bit of flour and water; if too dry, add wine.
    In both cases, cook 10 minutes more.)
    Serve with rice.
    Add green salad and crusty bread for a delicious meal!
    Can be made in advance a few days, refrigerated and reheated.
    Easy guest dinner!
