Leigh'S Twice Baked Potato Casserole - cooking recipe
Ingredients

2 lb. potatoes
1 c. mayonnaise
1/2 c. sour cream
1/4 c. milk
2 eggs
2 tsp. prepared mustard
2 Tbsp. fresh parsley
salt and pepper to taste
1/4 c. Parmesan cheese, grated
3 oz. Cheddar cheese
Preparation

Peel and boil potatoes as you would for mashed potatoes.
Mash and add mayonnaise, sour cream, milk, eggs, mustard and parsley. Mix well.
Pour into greased casserole dish.
Sprinkle Parmesan and Cheddar on top.
Bake, uncovered, at 350\u00b0 for 25 to 30 minutes. Serves 4.
