Ingredients

2/3 c. quick cooking rolled oats
1/2 c. sugar
1/2 c. butter, cut into 6 pieces
1/4 c. flour
1/4 tsp. ground cinnamon
1/4 tsp. ground ginger
1/2 tsp. salt
2 Tbsp. heavy cream
Preparation

Combine all ingredients in a small pot.
Cook over medium heat, stirring occasionally, until mixture begins to boil.
Remove from heat and stir well.
Drop 1 level teaspoon of dough onto greased baking sheet.
Repeat with remaining dough but allow only 4 to 6 cookies per baking sheet since cookie dough will spread during baking.
Bake at 375\u00b0 for 6 to 8 minutes or until light golden brown.
Leave cookies on baking sheet until just set, about 2 minutes.
Immediately transfer to rack for cooling.
Makes 2 dozen.
