Low-Fat Banana Muffins - cooking recipe
Ingredients

1 c. flour
3 Tbsp. sugar
2 1/2 tsp. baking powder
1/4 tsp. salt
1 c. bran cereal
1 c. mashed banana
1/4 c. skim milk
2 Tbsp. Smart Beat spread
1 egg white
Preparation

Sift together flour, sugar, baking powder and salt.
Add bran cereal. Stir in mashed banana. Now add skim milk and Smart Beat. Beat egg white until peaks form and fold into mixture.
Spread muffin tin lightly with Smart Beat spread.
Fill 2/3 full.
Bake 20 to 25 minutes at 400\u00b0. Makes 1 dozen.
