Cock-A-Leekie Soup - cooking recipe

Ingredients
    2 1/2 lb. boneless, skinless chicken breasts
    3 c. water
    1 stalk celery, diced
    2 carrots, diced
    1/2 c. barley
    1 c. chicken broth
    2 bay leaves
    2 tsp. minced fresh rosemary
    1 tsp. salt
    1/2 tsp. pepper
    3/4 lb. leeks (white and green parts), sliced (about 1 1/2 c.)
Preparation
    In a large pan, combine first 9 ingredients. Heat to a boil. Simmer 30 minutes. Add leeks. Heat to a boil. Simmer until chicken is tender. Remove chicken and let cool. When it is cool enough to handle, cut into bite-size pieces. Skim any fat from broth and remove bay leaves. Put chicken pieces back and reheat.
