Do Ahead Mashed Potatoes - cooking recipe
Ingredients

3 lb. potatoes, peeled, cooked and kept hot
8 oz. cream cheese, softened
1/4 c. butter or margarine
1/2 c. sour cream
1/2 c. milk
2 eggs, lightly beaten
1/4 c. chopped onions
1 tsp. salt
dash of pepper
Preparation

Mash hot potatoes in large mixer bowl.
Add cream cheese and butter.
Beat well until cheese and butter are both melted and mixed.
Mix in sour cream.
To the milk, add eggs and onions.
Add to potato mixture with salt and pepper.
Beat until light and fluffy.
Place in a greased 9-inch round casserole dish and refrigerate for several hours or overnight.
Bake in a 350\u00b0 oven for 45 minutes, until lightly browned on top.
Serves 8 to 12.
