Hors D'Oeuvre A La Harry'S Bar Of Florence - cooking recipe

Ingredients
    1 baguette
    1/3 c. olive oil
    1 garlic clove, peeled and diced
    2 ripe tomatoes, seeded and diced
    5 scallions, minced
    1/2 c. fresh herbs (chives, oregano, parsley)
    1 Tbsp. red wine vinegar
    dash of salt and pepper
Preparation
    Preheat oven to 400\u00b0.
    Cut baguette into 1/2-inch slices and rub both sides in 2 tablespoons of the oil; spread on a rimmed cookie sheet.
    Bake bread until nicely browned and crusty (about 10 minutes).
    Rub garlic on the cooled bread slices.
    In the meantime, combine the tomatoes, scallions, herbs and olive oil, vinegar, salt and pepper in a bowl.
    Just before serving, spoon tomato mixture on top.
