Micro-Roux - cooking recipe
Ingredients

2/3 c. vegetable oil
2/3 c. flour
2/3 c. chopped onions
2/3 c. chopped green peppers
2/3 c. chopped celery
2/3 c. chopped green onions
2/3 tsp. minced garlic
2/3 c. water
Preparation

Put several cups of flour in a large, heavy pot and brown at 400\u00b0 for about an hour, stirring every 15 minutes or so.
You may do this on top of the stove, stirring constantly for 15 minutes. Store in a jar in the cabinet.
Mix equal parts of flour and water or oil, stirring until smooth.
Add to gumbos, soups, stews or gravies.
