Ingredients

1/2 c. sugar
1 egg yolk
1 1/2 c. all-purpose flour
3/4 c. butter, softened
1 tsp. almond extract
1/4 c. unsweetened cocoa
Preparation

Preheat oven to 375\u00b0.
In a large bowl, combine all ingredients, except flour and cocoa.
Beat at medium speed until light and fluffy, 2 to 3 minutes.
Gradually add flour and cocoa until well mixed, 2 to 3 minutes.
Shape rounded teaspoonfuls as desired (balls, logs, flattened, etc.).
Place 1 inch apart on cookie sheet.
Bake for 7 to 9 minutes, or until set.
Cool. Decorate (if desired) with melted chocolate chips, nuts, maraschino cherries, etc.
Yields 3 dozen.
