Blender Cucumber Salad - cooking recipe

Ingredients
    1 large cucumber, pared
    1 (4 serving) envelope low calorie lemon-flavored gelatin
Preparation
    Slice cucumber into blender container.
    Cover; blend on high speed until pureed.
    Stop blender to push cucumber down from side of container.
    Add water to puree if necessary to make 1 cup. Dissolve gelatin in 1 1/4 cups of boiling water.
    Add cucumber. Chill until partially thickened.
    Stir occasionally.
    Pour into 3-cup mold.
    Chill until set.
    Serves 4.
    As desired vegetable exchange.
    Serve with cottage cheese dressing.
