Rhubarb Muffins - cooking recipe
Ingredients

1 c. brown sugar
1/2 c. oil
1 egg
2 tsp. vanilla
1 c. sour milk
1 1/2 c. chopped rhubarb
1/2 c. walnuts (optional)
2 1/2 c. flour
1 tsp. soda
1 tsp. baking powder
1/2 tsp. salt
Preparation

Beat brown sugar, oil, egg, vanilla and sour milk.
Add rhubarb and nuts.
Mix in flour, soda, baking powder and salt. Stir until moistened.
Sprinkle with topping made of 2 teaspoons melted oleo, 2/3 cup of white sugar and 1 teaspoon of cinnamon. Bake at 375\u00b0 for 20 to 25 minutes.
Makes about 18.
