Chiles Rellenos - cooking recipe

Ingredients
    4 (4 oz.) cans whole green chiles
    1 lb. Monterey cheese, cut
    1/2 lb. grated Cheddar cheese
    1 1/4 c. milk
    dash of paprika
    5 large eggs
    1/4 c. flour
    1/2 tsp. salt
    1/2 tsp. liquid red pepper
    1/2 tsp. pepper
Preparation
    Rinse seeds
    from
    chiles
    and dry on paper towel.
    Cut Monterey Jack
    cheese
    into
    1/2-inch
    cube by 3 1/4-inch long strips.
    Insert strip of cheese in each chile.
    Beat eggs, add flour until
    smooth.
    Add
    other ingredients and beat.
    (I put all these in
    the blender.) Place 1/2 of stuffed chiles in 7 x 13-inch pan.
    Cover
    with 1/2 of grated Cheddar.
    Repeat these layers. Pour
    egg
    mixture
    on
    top over all chiles.
    Bake at 350\u00b0 for 45 to 60 minutes.
    (I have done part of bake time in the microwave.) Allow
    10 minutes set time before serving, if possible.
