Carrot-Coconut Bread - cooking recipe

Ingredients
    3 eggs (room temperature)
    1/2 c. oil
    1 tsp. vanilla
    2 c. shredded carrots
    2 c. coconut
    1 c. raisins
    1 c. chopped walnuts
    2 c. flour
    1 tsp. baking soda
    1 tsp. baking powder
    1 tsp. cinnamon
    1/2 tsp. salt
    1 c. sugar
Preparation
    Beat eggs until light in color.
    Stir in oil and vanilla. Blend in carrots, coconut, raisins and nuts.
    Stir in flour, baking soda, baking powder, cinnamon, salt and sugar.
    Blend well. Spoon batter into 9 x 5-inch loaf pan.
    Bake at 350\u00b0 for 1 hour or until golden brown.
    Remove loaf from pan.
    Cool.
