Chittlings - cooking recipe

Ingredients
    chittlings
    water
    1 egg
    hot fat
    salt
    1 red pepper
    cracker crumbs
Preparation
    Pick fat off of chittlings; wash thoroughly several times. Put in pot and boil in salted water.
    Cook until tender.
    Drain. Cut in pieces.
    To fry, dip each piece in beaten egg and then in cracker crumbs.
    Fry in deep fat until brown.
