Calabacitas - cooking recipe

Ingredients
    2 or 3 medium zucchini, halved and sliced
    1 medium onion, quartered and sliced
    1 Tbsp. margarine (can use water)
    salt and pepper to taste
    1 can whole kernel corn
    1 clove garlic
    Cheddar cheese, grated
    fresh tomato, chopped
Preparation
    Saute zucchini and onion until just done.
    Add 1 can whole kernel corn, drained.
    Simmer for 5 to 10 minutes.
    Add 1 clove garlic.
    Simmer.
    Just before serving, sprinkle grated Cheddar cheese over and chopped tomato for color and garnish.
