Eggplant Salad(Melitzanosalata; Serves Six) - cooking recipe

Ingredients
    2 large eggplants
    1/2 c. olive oil
    several garlic cloves, chopped
    2 Tbsp. freshly chopped parsley
    juice of 1/2 lemon
    4 Tbsp. vinegar
    1 tomato (no skin)*
    salt and pepper
    olives for garnish
Preparation
    *Tomato can be substituted by 1 cup mayonnaise.
