Herbed Cornish Hens - cooking recipe
Ingredients

1/2 tsp. kosher salt
3/4 tsp. sage
1/2 tsp. each: allspice, black pepper and dried rosemary, crumbled
2 Cornish hens (approximately 1 1/2 lb. each), split and skinned
1 Tbsp. plus 1 tsp. olive oil
Preparation

In a small bowl, combine salt, sage, allspice, pepper and rosemary.
Coat the hens with oil, then with the herb mixture, rubbing them well.
Cover the hens with plastic wrap and refrigerate 3 hours.
Preheat broiler.
Set rack 8 inches from heat.
Arrange hens on broiler pan and broil 8 minutes; turn over and broil 7 to 8 minutes longer.
