Cauliflower Au Gratin - cooking recipe

Ingredients
    1 head cauliflower (cut into florets)
    1 tsp. salt, divided
    1/4 c. butter or margarine, melted
    24 saltines, crushed
    1 Tbsp. sugar
    1/2 tsp. pepper
    1/2 c. green pepper, diced
    1 (14 1/2-oz.) can diced tomatoes
    1 medium onion, chopped
    1 1/2 c. (6-oz.) shredded sharp cheddar cheese
Preparation
    Cook cauliflower in boiling water to cover with 1/2 teaspoon salt for 5 minutes, drain. In a large bowl, stir together 1/2 teaspoon salt, butter, crackers, sugar and pepper, mix well. Stir in cauliflower, bell pepper, tomatoes, onion and 1 1/4 cups cheese. Spoon into a lightly greased 2-quart baking dish. Sprinkle with remaining cheese. Bake at 350 degrees for 1 hour. Serve immediately.
