Pecan Carrot Bread - cooking recipe

Ingredients
    2 c. unsifted flour
    1 1/2 c. sugar
    2 tsp. baking soda
    2 tsp. ground cinnamon
    1/2 tsp. salt
    3 eggs
    1 (3 1/2 oz.) can flaked coconut
    3/4 c. chopped pecans
    1/2 c. raisins
    2 c. grated raw carrots
    1 c. peanut oil or Crisco oil
    2 tsp. vanilla
Preparation
    Combine flour, sugar, soda, cinnamon and salt.
    Stir in coconut, pecans and raisins.
    Blend in carrots, oil, eggs and vanilla.
    Pour into oiled and floured 9 x 5-inch loaf pan.
    Let stand 20 minutes.
    Bake at 350\u00b0 for 1 hour and 40 minutes or until done.
    Cool in pan 5 minutes before removing.
