Eggplant Casserole - cooking recipe

Ingredients
    1 egg, beaten
    1/2 tsp. onion powder
    1/2 tsp. salt
    1/8 tsp. pepper
    1/4 tsp. oregano
    3 or 4 slices bread, crumbled
    1 eggplant, peeled, chopped and cooked
    6 oz. can sliced mushrooms
    1/2 c. Parmesan cheese
Preparation
    Combine first six ingredients in bowl, mixing well.
    Add eggplant and mushrooms.
    Pour into 2-quart casserole.
    Sprinkle cheese on top.
    Bake at 325\u00b0 for 20 to 25 minutes or until set. Yields 8 servings.
