Apple Bread - cooking recipe

Ingredients
    2 1/2 c. sifted all-purpose flour
    2 tsp. each baking soda and baking powder
    1 tsp. pumpkin pie spice
    2/3 c. sugar
    1 c. each currants and chopped pecans
    1/2 c. oil
    2 eggs, slightly beaten
    1 1/2 Tbsp. vanilla
    2 tsp. rum extract
    2 medium apples, grated
    1 Tbsp. grated orange peel
    pecan halves and orange peel
Preparation
    In a bowl, combine dry ingredients, pecans and currants.
    Add oil, eggs, vanilla and rum extract.
    Stir just to blend.
    Fold in apples and orange peel.
    Spoon into greased and floured 9 x 5 x 3-inch loaf pan.
    Decorate top with pecans and orange peel.
    Bake at 350\u00b0 for 55 to 65 minutes until toothpick comes out clean. Cool; refrigerate.
