Zucchini Italian Style - cooking recipe

Ingredients
    2 Tbsp. oil
    1/2 c. chopped onion
    4 medium zucchini
    1 (1 lb.) can stewed tomatoes
    1/4 tsp. mixed Italian herbs
    1/2 tsp. salt
    1/4 tsp. coarsely ground black pepper
    1/3 c. grated Parmesan cheese
Preparation
    Wash, trim and coarsely chop zucchini.
    Heat oil in wok.
    Add onion and zucchini.
    Stir-fry about 1 minute.
    Add tomatoes, Italian herbs, salt and pepper.
    Bring to a boil.
    Cover and steam 4 to 5 minutes or until zucchini is still slightly crisp. Stir in cheese and stir-fry about 30 seconds.
    Makes 4 to 6 servings.
