Sweet Potato Chewies - cooking recipe

Ingredients
    3 C mashed sweet potatoes
    1 C frozen coconut, thawed
    1/4 C plus 1 Tbsp. self-rising flour
    1 C pecans, chopped
    3 Tbsp. milk
    2 C sugar
    1/4 C butter
    2 tsp. vanilla
    pinch salt
Preparation
    Combine sweet potatoes, flour, sugar, and milk. Beat at medium speed for one minute. Add salt & vanilla mixing well. Stir in coconut and pecans. Melt butter in 9 x 13 pan in oven at 400 degrees. Pour butter into sweet potato mixture, mixing thoroughly. Spread batter in baking dish. Bake at 400 degrees for 30-40 minutes or until edges are brown.
