Tex-Mex Casserole - cooking recipe

2 lb. ground beef or turkey
2 cans cream of chicken soup
2 cans cream of mushroom soup
1 can Ro-Tel jalapeno tomatoes
1 pkg. corn tortillas
1 c. coarsely chopped onion
1 lb. Cheddar cheese, grated
1/4 c. sliced jalapeno peppers (optional) *

*With the Ro-Tel tomatoes alone, this dish will be relatively mild; add jalapeno peppers to taste.
