Uncle Johnny'S Enchiladas - cooking recipe
Ingredients

1 pkg. corn tortillas
2 cans enchilada sauce (1 hot, 1 mild)
1/2 can water
2 cans chili
1 1/2 lb. grated Colby longhorn cheese
Preparation

Mix enchilada sauce and water in shallow skillet.
Heat to medium warm.
Mix chilies and cheese in container.
Dip each tortilla in enchilada sauce leaving excess sauce in pan.
Place tortilla on plate and put
1 Tbsp. chili and small amount of cheese down the middle.
Roll up and place in a 9x13 baking pan. Continue dipping, filling and rolling until pan is full and packed together.
Mix remaining enchilada sauce with chili.
Pour over enchiladas.
Sprinkle with cheese, covering enchiladas.
Cover with aluminium foil.
Bake at 350\u00b0 for 1 1/2 hours.
Serve with corn chips, hot peppers and salsa.
