Zucchini Omelet - cooking recipe

Ingredients
    1 large egg, beaten
    1/4 c. skim milk
    1 Tbsp. chopped parsley
    1/2 tsp. salt
    1/8 tsp. garlic powder
    1/4 tsp. pepper
    1/2 c. diced, cooked zucchini
    1 oz. slice American cheese
Preparation
    Combine egg, milk, parsley and seasonings.
    Add zucchini and cook in a nonstick pan over moderate heat until center is almost set, about 4 minutes. Top with cheese and melt cheese.
    Serves 1.
