Grandmama Suter'S Rainbow Dessert - cooking recipe
Ingredients

1 pt. whipping cream
3 Tbsp. sugar
1 tsp. vanilla
24 coconut macaroons, crushed
1 c. pecans, chopped
3 pt. sherbet (3 different flavors)
Preparation

Whip the cream with sugar and vanilla.
Add crushed macaroons and pecans.
Butter a 9 x 13-inch Pyrex dish.
Spread 1/2 of the whipped cream mixture in the dish.
Dot small amounts of sherbet, alternating flavors for color.
Spread the remaining whipped cream mixture on sherbet.
Freeze until needed.
Cut into squares and serve frozen.
May be topped with whipped cream and fruit garnish, if desired.
