Pumpkin Roll - cooking recipe
Ingredients

2 large eggs
1 c. white sugar
2/3 c. pumpkin
1 tsp. lemon juice
3/4 c. self-rising flour
2 tsp. cinnamon
1 tsp. pumpkin pie spice
1/2 tsp. nutmeg
1 c. pecans, finely chopped (optional)
Preparation

Beat eggs about 5 minutes; add sugar gradually.
Then add pumpkin, lemon juice, cinnamon, pumpkin pie spice and nutmeg. Blend together with mixer, then add flour.
Mix together well. Pour into greased and floured 15 x 10 x 1-inch jelly roll pan. Top with chopped pecans.
Bake at 375\u00b0 for 15 minutes.
Sprinkle with powdered sugar and turn out onto towel; sprinkle again with powdered sugar.
Starting at narrow end, roll up.
Cool about 1 hour; unroll and spread on Cream Cheese Filling.
