Garlic-Cheese Souffle - cooking recipe

Ingredients
    1 head garlic (cloves separated and peeled)
    1 Tbsp. fresh thyme
    1 bay leaf
    1/3 c. olive oil
    2/3 c. water
    1 c. milk
    1 1/2 c. heavy cream
    5 Tbsp. butter
    1/3 c. unbleached flour
    5 eggs, separated
    1/4 tsp. ground black pepper
    1/4 tsp. salt
    1 c. Swiss cheese, grated
    1/4 c. Parmesan cheese (freshly grated)
Preparation
    Place garlic, thyme, bay leaf, olive oil and water in a small heavy saucepan.
    Simmer, uncovered, over low heat for 30 minutes.
