Cranberry-Pear Chicken - cooking recipe

Ingredients
    1 pkg. boneless chicken breasts
    1 Tbsp. vegetable oil, divided
    salt and pepper to taste
    1 onion, chopped (about 1 c.)
    3 firm pears, peeled, cored and diced or 6 canned halves, drained and diced
    1/2 c. fresh cranberries or 1 can whole cranberry sauce
    1/4 tsp. ground cinnamon
    1/4 tsp. ground ginger (optional)
Preparation
    Trim and discard visible fat from chicken.
    In a large nonstick skillet, over medium-high heat, heat 1 1/2 teaspoons oil. Sprinkle chicken breasts lightly with salt and pepper.
    Brown about 2 minutes pre side.
    Remove from pan and reserve.
    Add remaining oil to skillet and cook onions until softened, about 4 minutes.
    Add pears, cranberries, cinnamon and ginger.
    Stir to combine well.
    Place chicken on top of fruit and onions.
    Cover and simmer 10 to 12 minutes until cooked through.
    Serve with brown, wild rice.
