Hot German Potato Salad - cooking recipe
Ingredients

4 slices bacon, cut into 1-inch pieces
1/3 c. cider vinegar
1 1/2 tsp. sugar
1/4 tsp. salt
1/4 tsp. black pepper
1/4 c. water
2 tsp. cornstarch
12 oz. frozen fries (about 3 c.)
1/3 c. sliced scallions
3 Tbsp. chopped parsley
Preparation

Cook bacon over medium-high heat in large nonstick skillet until crisp.
Remove from heat.
Remove bacon with slotted spoon and set aside.
Strain all but three tablespoons of fat from pan. To fat in skillet, add vinegar, sugar, salt and pepper.
Mix water with cornstarch and stir into skillet.
Cook and stir over medium heat until potatoes are tender, stirring once or twice.
Add bacon, onions and parsley.
Mix gently to heat through.
Serve hot.
Makes four side dish servings.
