Carolyn'S Pancakes - cooking recipe

Ingredients
    2 c. flour (self-rising)
    1 1/3 c. milk
    1/4 c. oil, melted butter or shortening
    2 Tbsp. sugar
    2 eggs
Preparation
    Put eggs and sugar in a 2-quart pitcher or mixing bowl and beat lightly with rotary beater.
    Blend in milk and oil.
    Add flour.
    Blend together and beat until batter is nearly smooth.
    Do not overbeat; small lumps will break up when fried.
    Pour batter on hot griddle or frying pan (about 500\u00b0).
    Turn when bubbles rise to surface in center.
    Serve with favorite syrup or fruit.
