Rice And Apricot Stuffing(For Duck Or Chicken) - cooking recipe

Ingredients
    1/4 c. butter
    1/4 c. onion, chopped
    1 Tbsp. parsley, finely chopped
    1 c. celery leaves and stalks
    3 c. boiled rice
    1 c. dried apricots, cut in thin strips
    1/2 tsp. savory
    salt and pepper
Preparation
    Heat butter.
    Add onion, parsley and celery.
    Cook about 5 minutes, or until soft but not browned.
    Add rice and apricots, tossing together lightly.
    Season with savory and salt and pepper to taste.
    Makes enough for a 5-pound chicken or duck.
