Blueberry Oven Pancake - cooking recipe
Ingredients

2 c. buttermilk baking mix or 2 c. flour, 4 tsp. baking powder and 1/2 tsp. salt
1 c. milk
2 Tbsp. sugar
2 Tbsp. vegetable oil
2 eggs
1 c. fresh or frozen blueberries, thawed and drained
Preparation

Heat oven to 425\u00b0.
Grease jelly roll pan (15 1/2 x 10 1/2 x 1-inch).
Beat all ingredients, except blueberries, with wire whisk or hand beater until well blended.
Fold in blueberries.
Spread batter in pan.
Bake 14 to 16 minutes or until top is light golden brown.
Cut into 12 pieces.
Serve immediately.
Yields 6 servings.
