Diet Chick(Good Enough For Company) - cooking recipe

Ingredients
    2 stalks celery and 1 whole onion in 1-qt. water
    meat from 2 full chicken breasts, skinned, boned and cut into strips
    2 cloves garlic, crushed
    2 red peppers, cut into strips
    2 or 3 green peppers, cut into strips
    juice from 2 lemons
    dash of cayenne
    salt
    2 onions, diced
    soy sauce to taste
    black pepper to taste
Preparation
    First:
    Boil 1/4 of the chicken strips with celery and whole onion in 1-quart of water.
    Save broth. Then use 1 cup of broth to cook garlic and onions (microwave suggested). Brown remaining chicken strips in skillet sprayed with Pam. Pour all remaining ingredients, including as much broth as pan can hold.
    Stir and gently cook until peppers are tender.
    Adjust flavors.
    Too lemony?
    Add soy sauce.
    Serve over linguine or any pasta or rice. Yields 6 servings.
