Pumpkin Roll - cooking recipe
Ingredients

1 c. flour
1 tsp. baking powder
1 tsp. cinnamon
1 tsp. ginger
3 eggs
1 c. sugar
3/4 c. cooked pumpkin
1 tsp. lemon juice
1 c. pecans, finely chopped
Preparation

Sift together first 4 ingredients; set aside.
Beat eggs 5 minutes.
Add sugar to eggs 1 tablespoon at a time.
Add pumpkin and lemon juice to egg mixture.
Fold flour mixture into egg mixture until blended.
Spread in greased and floured jelly roll pan.
Sprinkle with pecans.
Bake at 375\u00b0 for 15 minutes.
Turn out on cloth sprinkled with powdered sugar.
Roll up and cool.
Unroll cake, spread on filling.
Reroll cake.
Place roll, seam-side down. Refrigerate at least 4 hours.
Dust with powdered sugar.
Yields 8 to 10 servings.
