Walterspiel(Potato, Leek Soup) - cooking recipe

Ingredients
    3 large potatoes, sliced thin
    4 slices lean bacon, diced
    6 leeks, sliced thin
    1/4 c. chopped onion
    2 Tbsp. flour
    4 c. chicken broth
    2 egg yolks, beaten
    1 c. sour cream
    1 Tbsp. chopped parsley
    2 Tbsp. chopped chervil
Preparation
    Saute bacon in a deep saucepan for 5 minutes.
    Add leeks and onion and saute for 5 minutes.
    Stir in flour.
    Add chicken broth slowly, stirring constantly.
    Add potatoes and simmer for 1 hour. Combine egg yolks and sour cream and stir them into soup.
    Simmer for 10 minutes, stirring constantly.
    Add parsley and chervil. Makes about 2 quarts.
