Ingredients

4 (4 to 6 oz.) top sirloin steaks (1 to 2-inch thickness)
1/3 c. olive oil plus 3 Tbsp.
2/3 c. vinegar, divided in half
2 or 3 (3-inch) sprigs rosemary, chopped
3 cloves garlic, crushed and minced
1 Tbsp. olive oil
2 Tbsp. minced shallot
1 Tbsp. butter
Preparation

Heat a large skillet to hot. Pierce each steak with a fork and place in a shallow bowl. Add 1/3 cup olive oil and 1/3 cup vinegar, rosemary and garlic. Marinate steaks 30 to 45 minutes, turning several times.
